There is a standard in the culinary world that was once set by Mr. Joel Robuchon. A feature of his recipe is a large amount of butter. Not even so. To be precise, a kilogram of potatoes comes from half a kilo of good butter. And mix the butter cold, dissolving and giving the mashed potatoes a creamy texture. Every cook at least once, but must prepare classic mashed potatoes according to Robuchon&#8217;s recipe.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Kyiv. Ukraine. I would even say, with a delicacy, caviar.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ingredients:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 kg of peeled potatoes<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">250 g of butter 82.5% fat<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 st. l. caviar salt<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">bunch of green onions<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 tsp. salt<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">How to cook?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">First, you need to choose potatoes. There are shops that sell varieties of <a href=\"https:\/\/www.ukrgate.com\/eng\/?p=11703\" data-type=\"post\" data-id=\"11703\">potatoes <\/a>for cooking or frying. They are different. For mashed potatoes, it is better to choose light varieties of potatoes with a high content of starch.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">So the potatoes should be washed, peeled, and washed again. Only then cut into large, at least 3-4 cm, pieces. Pour cold water and cook for 20-25 minutes until fully cooked. Salt only after boiling water.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When the potatoes are ready &#8211; drain the water, leaving one cup. Now the potatoes should be dried over low heat, and then rubbed or mashed. Now it&#8217;s time to add cold butter, mixing it into mashed potatoes. Add the oil in small pieces &#8211; so you can dissolve it faster. If you want a more tender and creamy texture &#8211; you can gradually add potato broth (we left it in a cup just in case).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And now &#8211; the most important thing! You need to add caviar to the puree. This is a unique spice made from dried caviar of Bessarabian fish. We get a wonderful caviar taste of mashed potatoes.
