Pasta, lasagna, ravioli, pizza, tiramisu – all these dishes are not only firmly established in the menu of Ukrainian restaurants, but also found a worthy place in home cooking.

Kyiv. Ukraine. Ukraine Gate – May 26, 2021 – Kitchen

Risotto deservedly begins to enjoy increasing popularity. The main products that are part of it are always at hand. Rice, onions, olive oil are in every kitchen. The availability of other ingredients depends only on your taste preferences.

Today we offer you to cook risotto with young green peas. It will take some time to prepare it, and as a result, you will get a full-fledged delicious dish that can be served both on its own and as a side dish to meat or fish.

Ingredients:

1 liter of broth

250 g of arborio rice

200 g of green peas

1 bulb

2 cloves garlic

100 ml of white dry wine

50 g of parmesan

50 g of butter

2 st. l. olive oil

ground black pepper

salt

Preparation:

Chop the onion very finely and sauté in olive oil until transparent, then add the chopped garlic and fry for another 1 minute.

In a saucepan with onions, add rice and, stirring constantly, fry for another couple of minutes.

Then pour in the wine and cook, stirring, until it almost completely evaporates, then pours in enough hot broth to cover the rice, add salt and simmer until completely absorbed.

Add the remaining broth little by little and cook over low heat, not forgetting to stir, until the rice is ready al dente. Add each new portion of broth only when the previous one is completely absorbed. With the latter add green peas and simmer for about 5 minutes.

At the end of cooking, pepper the risotto, add butter, grated Parmesan cheese, mix well and give a couple of minutes to rest.

On a side note

To prepare risotto, choose rice varieties with a high starch content – marital, rum, Baldi, vialone nano. However, the best varieties are arborio and carnaroli.

Rice for risotto should not be washed, so as not to wash the starch out of it.

You can use any broth – and meat, and fish, and vegetables.

Do not skimp on guilt, because the final result will depend on its quality. Buy something decent. Only 100 ml will go to the risotto, and the rest you can serve with the finished dish and have a great evening. However, if good wine is not found, it is possible to do without it at all.

Read also: Cooking Rice for Maximum Health Benefits

Source: Ukrgate

Italian cuisine is firmly entrenched in our lives.
