Ukraine. Ukraine Gate &#8211; January 15, 2021 \u2013 Kitchen<\/p>\n<p>This is homemade yeast bread made from a mixture of rye and wheat flour with the addition of dried chamomile. This is the kind of bread, only with the addition of buckwheat flour, we bake in a restaurant. And although the preparation of bread takes a long time, but the result is worth it. It turns out incredibly tasty and fragrant.<\/p>\n<p>Preparation time: 3 hours<\/p>\n<p>Cooking time: 40 minutes<\/p>\n<p>Ingredients:<br \/>\nwater &#8211; 250 g<\/p>\n<p>wheat flour &#8211; 250 g<\/p>\n<p>rye flour &#8211; 100 g<\/p>\n<p>vegetable oil &#8211; 2 tbsp. l.<\/p>\n<p>yeast (&#8220;live&#8221;) &#8211; 12 g<\/p>\n<p>dry chamomile (small) &#8211; 5-10 g<\/p>\n<p>salt &#8211; \u00bd tsp.<\/p>\n<p>Preparation:<\/p>\n<p>To begin, prepare the mash. Dissolve the yeast (12 g) in warm water (250 g) and add sugar (1 tbsp.). Stir a little and leave for 15 minutes for the yeast to start working and form a foamy &#8220;cap&#8221; on the surface.<\/p>\n<p>Now you need to combine all the dry elements of the dough. In a bowl, mix wheat (250 g) and rye flour (100 g). Stir gently.<\/p>\n<p>Then add \u00bd tsp. salt and fine dried chamomile (5-10 g to your taste).<\/p>\n<p>Then add to the bowl 2 tbsp. l. vegetable oil and stir. It will make the dough more elastic.<\/p>\n<p>Add the dough and knead the dough, stirring gently with a spoon. Then form a ball of dough with your hands. Cover the dough bowl with a towel and leave in a warm place for 50 minutes to come up.<\/p>\n<p>Then gently wrap the dough. This will help release excess air from it. If necessary, moisten your hands with a little vegetable oil. Return the dough to the bowl and leave it again for 50 minutes in a warm place without drafts for a second rise.<\/p>\n<p>Sprinkle a little flour on the table or board surface. Lay out the dough that came up, and gently hug again.<\/p>\n<p>Form the bread into a ball shape, gently rolling the dough from the center to the edges.
