Pork in Tuscan style
Ingredients:
1.5 kg of pork loin with skin, but without ribs
1 st. dried or 2 bunches of fresh rosemary
bunch of fresh grass or ½ tbsp. dried fennel fruits
1 tsp. anise
5-6 pcs. celery stalks
large sea salt
Preheat the oven to at least 220 ° C. Burn the skin and wash with a brush. Chop rosemary and fresh fennel or its dried fruits. Make a few incisions in the skin and rub in a little salt, fennel, and rosemary. Turn and rub into the meat most of the salt, anise, fennel, and rosemary. Put in the middle of the layer cut celery stalks. Roll into a roll, pull tightly with a rope, and place in the oven for 2 hours. It is recommended to place the roll on the grill for barbecue in the children or on the grill in the oven, placing the pan at the bottom. After 20 minutes, reduce the temperature to 160 ° C and leave for an hour and a half. Every 10 minutes, roll the roll and pour the fat on the deck.
Mostarda – Italian fruit mustard
Ingredients:
750 ml of dry red wine (“Chianti”, “Merlot” or “Cabernet”)
400 g of apples
2 oranges
1 lemon
½ cl. cane sugar
10 g of ground mustard
1/3 tsp. cinnamon
1/2 tsp. ground ginger, ground black pepper, dried chili
Cut the lemon zest and cut into strips. Peel apples and oranges, remove stones, cut. Put a pan with wine, slices of apples, oranges, and zest on the stove. Bring the mixture to a boil, add sugar and reduce heat to low. Cook for 2.5-3 hours until the sauce is thick as sour cream. Stir periodically and make sure it does not burn. At the end add red and black pepper, mustard, cinnamon, and ginger. Boil for another 5 minutes and leave to cool.
