Making delicious mashed potatoes is another pleasure. There is a standard in the culinary world that was once set by Mr. Joel Robuchon. A feature of his recipe is a large amount of butter. Not even so. To be precise, a kilogram of potatoes comes from half a kilo of good butter. And mix the butter cold, dissolving and giving the mashed potatoes a creamy texture. Every cook at least once, but must prepare classic mashed potatoes according to Robuchon’s recipe.

Well, if the classics are already cooked, I offer a recipe for delicious mashed potatoes, but with a very interesting taste. I would even say, with a delicacy, caviar.
Ingredients:
1 kg of peeled potatoes
250 g of butter 82.5% fat
1 st. l. caviar salt
bunch of green onions
1 tsp. salt
How to cook?
First, you need to choose potatoes. There are shops that sell varieties of potatoes for cooking or frying. They are different. For mashed potatoes, it is better to choose light varieties of potatoes with a high content of starch.
So the potatoes should be washed, peeled, and washed again. Only then cut into large, at least 3-4 cm, pieces. Pour cold water and cook for 20-25 minutes until fully cooked. Salt only after boiling water.
When the potatoes are ready – drain the water, leaving one cup. Now the potatoes should be dried over low heat, and then rubbed or mashed. Now it’s time to add cold butter, mixing it into mashed potatoes. Add the oil in small pieces – so you can dissolve it faster. If you want a more tender and creamy texture – you can gradually add potato broth (we left it in a cup just in case).
And now – the most important thing! You need to add caviar to the puree. This is a unique spice made from dried caviar of Bessarabian fish. We get a wonderful caviar taste of mashed potatoes. Decorate this dish with a piece of soft butter and sprinkle it with green onions.
