When the season of bright, fragrant, and delicious eggplants begins, there is a desire to eat them every day, because it is not only beautiful but also a very cinnamon vegetable. Therefore, today we offer you a simple recipe for eggplant and bean salad, which will perfectly diversify your diet and enrich the body with useful vitamins.

You can eat this salad with baked chicken or as a standalone dish.
Ingredients:
eggplant – 500 g
beans – 120 g
olive oil – 2.5 tbsp. l.
sugar – 1.5 tbsp. l.
onion – 100 g
ground black pepper – to taste
fragrant pepper – to taste
salt – to taste
parsley greens
Preparation:
Beans (you can replace it with chickpeas) rinse with water for a few hours (but it is best to leave it overnight). Drain the water and boil it.
Wash and cut the eggplant into small pieces, boil and discard in a colander.
When the water from the eggplants drains, transfer them to a bowl with the beans, stir.
Cut a small onion into half rings and greens and also add to the eggplant and onion.
Add spices to taste to the salad and season it with olive oil. Stir in the salad.
