Due to the heat and the abundance of vegetables in the markets, the summer menu is much more diverse and, most importantly, easier.

Cauliflower soup is no less useful than chicken broth. At the same time, it contains more vitamins. If you make a pureed soup from cauliflower, you will get a dish with great taste and an incredibly delicate structure.
Ingredients:
500 g of cauliflower
3 potatoes
2 carrots
800 ml of water
150 ml of cream
100 g of processed cheese
basil
ground black pepper
ground allspice
salt
Preparation:
Wash cauliflower and disassemble it into inflorescences. Wash potatoes, carrots, peel, and cut them into small pieces.
Dip the prepared vegetables in boiling water and cook at a low boil until the potatoes are ready, then add the processed cheese and mix well to disperse.
Then salt and pepper the soup, puree with a blender, pour in the cream, bring to a boil, remove from the heat and allow to infuse for 10-15 minutes.
When serving, sprinkle the soup with fresh herbs.
On a side note:
Choose greens to your liking. You can use chopped parsley or dill, a few basil leaves, or a couple of sprigs of rosemary.
Serve cauliflower cream soup with croutons or croutons.
If you use processed cheese in briquettes, pre-grate it on a grater or chop it finely.
If you want to make the taste of the soup more pronounced, add mashed onions, fried bacon, or crushed garlic clove.
