Raspberries are one of the most popular berries of the summer season. And not only because it is very tasty, but also because it is extremely useful.

Known anti-inflammatory and antipyretic properties of raspberries. In addition, it has the ability to strengthen the cardiovascular system and thin the blood, reducing the risk of blood clots and, consequently, strokes and heart attacks. Fresh berries improve appetite, normalize digestion, promote the dissolution of stones and sand in the kidneys.
Having adopted a recipe for a cake with raspberries, you will bake an airy dessert with the light aroma and sourness of your favorite berry.
Ingredients:
300 g of flour
170 g of sugar
120 ml of vegetable oil
80 g of butter
3 eggs
1 teaspoon baking powder
100 g of raspberries
zest of 1 lemon
pinch of salt
Preparation:
Raspberries are sorted, cleaned, washed, and dried.
Melt the butter and cool.
Sift flour together with baking powder and salt.
Combine eggs with sugar and beat with a mixer until white at high speed.
Without stopping the beating, pour in the vegetable oil. Then, reducing the speed, add non-hot butter, grated lemon zest, gradually add flour, and mix thoroughly so that no lumps remain and a homogeneous dough with a thick sour cream consistency.
At the bottom of the form to layout a little raspberry, pour it with the prepared dough, then again the berries, cover them with dough and so spread everything in layers. The last layer should be the dough. Fill in the form by about 2/3.
Bake the cake for 40-45 minutes at 180 ° C.
On a side note:
Raspberries are not introduced into the dough but laid out in layers so as not to mash the berries while stirring.
The finished cake can be sprinkled with powdered sugar or cocoa powder, pour caramel, or chocolate glaze.
Raspberries for stuffing can be replaced with currants, blackberries, blueberries, blueberries, or berry mix.
In winter, use frozen berries for cake.
