Eggplant fryer recipe. Fritters are very similar in their general mood to pancakes, only the dough in them is minimal – they are more saturated and this is a great option for a hearty, but vegetable garnish to any meat or fish dish.

These fryers will go well with any sauce based on sour cream or yogurt with a light pleasant refreshing acidity!
Ingredients:
eggplant – 2 pcs. (650)
eggs – 2 pcs.
flour – 125-150 g.
baking powder – 1 tsp.
garlic – 2-3 cloves
feta cheese – 150 g.
oregano – 1 tsp.
salt to taste
vegetable oil for frying
Preparation:
- Cut the peel of the eggplant. It is tough, so it is better for fritters to get rid of it. Peeled eggplants cut into small cubes and send them in a deep bowl and salt. Stir and leave for 15 minutes to separate the juice and the pieces themselves became a little denser.
- After 15 minutes, wash the pieces with clean water. Transfer to a combined bowl. Garlic and oregano passed through a press, are sent there. Grind the mass to a pasty state. Send in a bowl of feta, eggs. Mix again.
- Pour the mixture into a convenient deep bowl. Add flour, baking powder. Mix the dough.
- Heat a frying pan well, pour in oil, and fry fryers for 3-4 minutes on low heat until golden brown. Turn to the other side and fry until golden brown on the other side.
- Ready pancakes are spread on a plate covered with paper towels to remove excess oil.
