Prepare shkmeruli. This is a Georgian dish, where the amazing name hides nothing but fried chicken in milk-garlic sauce.

Shkmeruli are very tender and juicy pieces of chicken with a crispy fried skin, complemented by a fragrant sauce. Any side dish is superfluous here. Only vegetables and greens. Shoti – Georgian bread in the form of a shuttle – will be very appropriate.
Ingredients:
1 chicken weighing 1-1.2 kg
1 glass of milk
1 head of garlic
oil
ground black pepper
salt
Preparation
Wash the chicken, dry it, cut it along the breast and beat it slightly, giving it a flat shape, just like pre-cooked tobacco chicken.
Salt, pepper, grease the prepared chicken with oil, place on a frying pan and fry on both sides until golden brown, pressing the carcass with a press, or bake in the oven, then process into portions.
Bring the milk to a boil, add the melted chicken fat, passed through a garlic press, add a little salt and boil a little.
Pour the fried chicken pieces with hot milk sauce, bring to a boil, remove from heat and infuse for 5 minutes.
On a side note
It’s no secret that the best chicken for shkmeruli is a chicken, ideally a chicken. If you can not find them quickly, try to bypass the broilers and buy a farm chicken.
In Georgia, shkmeruli are cooked in a kettle – stone or clay pans, but it is quite acceptable to use cast iron pans.
The recipe for shkmeruli is very short, and, unlike other Georgian dishes, it does not use a large bouquet of spices, but sometimes before frying the chicken is rubbed with swan salt or adjika.
