flour – 250 g
sugar – 100 g
butter – 150 g
eggs – 8 pcs.
zest of 2 lemons

Preparation:
First, separate the yolks from the proteins.
Now melt the butter, add the lemon zest, sugar and mix well.
Continuing to stir (you can use a mixer), add the yolks one by one.
Add flour to the mixture and mix well again.
Beat the separated proteins to stable peaks. Add them to the dough and again gently stir with a spatula from the bottom up.
Grease the form with butter and sprinkle with breadcrumbs. Pour the dough into a mold, distribute evenly and place in the oven. Bake this sponge cake for 15-20 minutes in a preheated oven to 220 ° C.
