Ingredients:
3 st. spoons of flour
3 egg yolks
500 ml of milk
vanilla sugar or vanilla
100 g of butter
100 g of sugar
pinch of salt
1-2 tablespoons of rum
Step 1
Mix in a bowl the yolks, sugar, salt, and flour. To make a homogeneous liquid dough – add as much milk as you think you need – approximately 1/5 part. And, by the way, take fat, good milk. With white water 0% fat you will not know what.
Step 2
Bring most of the milk to a boil, but not to boil. Use a saucepan or skillet with a thick bottom. Remove from heat. And gradually, in a thin stream, stirring constantly, add the batter. That’s not how a lump should come out. If they appear – you can, of course, use a sieve.
Step 3
Return to low heat, bring to a boil, stirring constantly. Watch the bottom – the cream should not burn. If it burns – you can, of course, pour it into another pan. The cream should thicken slightly and become viscous. If so – remove from heat.
Step 4
Now you can add butter. Use sweet butter, cream, 82% fat, at least. Cold, diced. Stir the cream constantly until the oil is completely dissolved. If you used vanilla extract – it’s time to add. If vanilla sugar, then at the beginning with sugar.
The taste of the cream, if desired, can be made lemon or lime flavored by adding a little zest at the very end.
Step 5
Pour in the alcohol, try the cream. If you like – cover with plastic wrap so that it is close to the surface, and allows it to cool. It is desirable in a bowl with ice water in the summer, and in the winter in the cold, and at someone and in the cold.
