Pancakes are considered a dish of Slavic cuisine. According to one version, the word “pancake” comes from the Ukrainian “mill”, because they were always prepared from grain ground into flour.

Pancakes are thin and yeast, and you can cook them with milk, yogurt, and even water. Pancakes cooked in water quickly become brittle and baked in milk or kefir retain a delicate texture longer.
Cooking time: 60 minutes
Ingredients:
3 eggs
450 ml of kefir
1 cup flour
3 st. l. oil
2 st. l. sugar
½ tsp. soda
½ tsp. salt
50 ml of warm water (optional)
Step by step preparation:
- In a bowl, mix eggs, salt, baking soda, and sugar until the mass is slightly lighter.
- Add half of the flour so that there are no lumps and mix well. Pour kefir and mix well again. Sift the remaining flour and bring the pancake dough to a uniform consistency.
- The dough should be left for 20-30 minutes in the heat so that the flour swells and the gluten disperses. When the dough is infused, it can become thicker. You can bake lush pancakes, or add at this stage about 50 ml of water, then they will turn out thin. The main thing is not to overdo it with the liquid so that the finished pancakes lag well behind the pan during baking.
- Before baking pancakes, you need to heat the pan well. Put it on high heat, pour oil and heat. Add hot oil to the dough and mix quickly so that the mass does not curl under the influence of temperature. Fry the pancakes in a dry pan.
Tender pancakes with kefir can be served with a salty and sweet filling. Such pancakes can be stuffed with meat or cheese, or poured with liquid honey.
