The phrase “jam without cooking berries” may seem as absurd as “crab meat without crabs.” But there is no contradiction here. You will have to cook, but not the berries themselves, but the syrup with which they are poured. Thanks to this fragrant preparation, which has preserved many vitamins, you can easily prepare a strawberry cake for the New Year.

Similarly, you can make jam from currants, apricots, and other fruits and berries.
Ingredients:
1 kg of strawberries;
1 kg of sugar;
2 grams of citric acid;
200 g of water.
Preparation:
Prepare the syrup. Pour the sugar into the pan and add the water.
While the sugar is dissolving, eat strawberries. Use a knife to remove the stalks. Cut more berries in half, small berries do not need to be cut. Put the prepared berries in a bowl that is not afraid of high temperatures.
Bring the sugar syrup to a boil, add the citric acid, and cook for 13-15 minutes. Stir it so that the sugar does not burn. The finished syrup will be similar in color to honey.
Place a bowl of strawberries on a hot stand or place it in a larger plastic container. Fill the berries with boiling syrup. It will bubble right in the bowl for a while longer.
Let the berries stand for 15-20 minutes. Under the influence of hot berries will let the juice, and the syrup will turn bright red.
During this time, prepare the jars and lids. Pour into half-liter jars about 50 mg of water and send in the microwave on high power for about 5-7 minutes.
Boil the lids in a saucepan for 2-3 minutes, then place them on a clean dry towel and allow them to dry without wiping.
Pour the syrup through a colander into the same pan where it was cooked. At the same time try not to touch the berries with your hands and spoon.
Scrape the thick layer formed on the walls of the bowl with a spoon and put it in a saucepan. Boil for 10 minutes. The bowl does not need to be washed.
Fill the berries again with boiling syrup, as the first time. Let stand for 20 minutes.
Remove the sterilized jars from the microwave and place them upside down on a clean, dry towel.
And again pour the syrup into the pan. Now it needs to be boiled for only 5 minutes.
Meanwhile, arrange the strawberries in jars, filling each no more than half. The ratio of berries and syrup in the jar may vary.
Remove the foam from the finished syrup. Pour it into jars to the edges and screw them with lids.
Place the jars upside down and wait for them to cool and the lids to retract.
