Most of us can’t imagine our lives without meat, completely undeservedly forgetting about offal, the queen of which, no doubt, is the liver.

No wonder many delicacies are prepared on its basis: liver in the style of Stroganoff, pate, foie gras. And what is the famous Strasbourg pie, one of the main ingredients of which is the same liver?
Include liver in the home menu as often as possible, because it is unique in its composition. The level of protein in the liver is not inferior to meat. It contains iron, which prevents a decrease in hemoglobin in the blood and the development of anemia. Add to this a fairly high content in the liver of copper, calcium, magnesium, phosphorus, zinc, vitamins A, C, and B, and you will understand that the importance of this product in the diet is difficult to overestimate.
Ingredients:
0.5 kg of liver
2 bulbs
2 eggs
2 tablespoons semolina
2 tablespoons sour cream
oil
ground black pepper
salt
Preparation:
Wash the liver, dry it, cut it into pieces and turn it together with the onion through a meat grinder or grind it with a blender.
Salt, pepper, beat eggs, add sour cream, add semolina, mix well and leave for 15 minutes for the semolina to swell.
Fry the oil in a frying pan, spread the liver mass in it with a tablespoon, and fry on medium heat for 3-5 minutes on each side until you get a beautiful blush.
On a side note
Use the liver you like best – chicken, turkey, veal, beef, pork.
Semolina can be replaced with flour, in which case the dough does not have to stand.
If you want the pancakes to turn out more lush, add 0.5 teaspoons of baking soda quenched with vinegar to the liver mass.
Serve liver pancakes with any side dish – mashed potatoes, boiled buckwheat or rice, or with a salad of fresh vegetables. And don’t forget to season the pancakes with sour cream.
