Many Ukrainians believe that a couple of hours is enough to marinate kebabs. However, this opinion is wrong, experts say. The meat should lie in the marinade longer.

It is a bad idea to string onion rings on a skewer. The best marinade chefs consider onions with salt. Yogurt and ketchup for barbecue are better not to use. Due to the large dose of sugar in them, such meat will not be fried inside but charred on the outside. This is due to the fact that the sugar begins to burn quickly during the frying of kebabs.
Another common myth concerns the freshness of meat. In the case of kebabs, the fresher, the better – does not work. It is better to choose “ripe” meat, then it will be softer. Beef needs to lie for 14 days, pork ten, and lamb – seven. If you take meat in the store, it is better to buy products from large companies. Their products are subject to state veterinary control – this reduces the risk of poisoning and virus infection.
