No matter how tasty rich borsch or fragrant chicken broth, in the summer you want to taste something cool and refreshing, so on a hot afternoon okroshka will be just right.

Okroshka is very useful, because for its preparation fresh greens and vegetables are used, which means that all the vitamins present in them are preserved. In addition, used in the proposed recipe, kefir has a beneficial effect on the microflora of the gastrointestinal tract, is a supplier of calcium necessary for strengthening bones, strengthens the immune system.
Ingredients:
300 g of chicken fillet
3 potatoes
3 cucumbers
3 eggs
200 g radishes
100 g of green onions
25 g of dill
1 liter of yogurt
0.5 liters of carbonated water
1 bay leaf
black pepper peas
salt
Preparation:
Boil chicken fillet until cooked in salted water with the addition of bay leaf and a few peas of black pepper, cool, and cut into small pieces.
Boil the potatoes in their skins, peel, and cut into cubes. Just cut cucumbers, radishes, and hard-boiled eggs. Chop green onions and dill.
Put the prepared products in a saucepan and mix gently.
Combine kefir with carbonated water, salt, stir, pour into a saucepan and refrigerate for about an hour.
On a side note
To speed up and simplify the process of cooking okroshka, chicken fillet can be replaced with ham, boiled sausage, or sausages.
To make it spicier, season the okroshka with mustard, vinegar, or lemon juice.
To make the okroshka thicker, mash half the potatoes and 1 egg yolk.
When serving, place a couple of ice cubes on a plate with the refrigerator.
