Today’s recipe for cheesecake with fresh berries is good because the berries are laid out on a ready-made cake and are not subjected to heat treatment.
800 g of cheese
400 g of pastries
400 g of berries
250 g of sugar
250 g cream
150 g of butter
120 g of cream of 20% fat content
1 sachet of vanilla sugar
Grind cookies into crumbs with a blender or rolling pin.
Melt the butter, cool, combine with the crumbs and mix thoroughly.
Place the prepared mass in a detachable form greased with butter and compact well on the bottom and along with the entire height of the sides, trying to make the bottom about 1 cm thick and the sides about 0.5 cm. While the filling is being prepared, the form with the base should be kept in the fridge.
Beat the cheese with an immersion blender, add cream, and, continuing to work with the blender, bring the mass to a creamy texture, then add 200 g of sugar, eggs, and vanilla sugar and beat until smooth.
Put the cheese filling in the cooled base and bake for about 50 minutes at 170 ° C.
Whip the sour cream with the remaining sugar, pour on the baked cheesecake, and bake for another 7 minutes at 200 ° C.
Wash berries, dry, spread on the surface of chilled cheesecake, and refrigerate for 8-10 hours.

You can use cherries, sweet cherries, strawberries, strawberries, raspberries, blackberries, currants, blueberries, or berry mix to make cheesecake.
Buy cheese with a fat content of 10-15% and in no case grainy. Part of the cheese can be replaced with cream cheese.
Use any shortbread or oatmeal cookies to make the base.
