Omelette “Polar” appeared on the French island of Mont Saint-Michel in the 19th century, and it was invented by Annette Polar, who lived there. She allegedly decided to open a hotel where she wanted to receive travelers and feed them delicious food. One of the hotel guests shared with Annette her quick way of cooking eggs, which the woman soon included in her menu. The dish became so popular that it first glorified the island and then the whole of France.
But everyone will actually be able to cook this dish and today we will tell you how.
Ingredients:
chicken eggs – 4 pcs.
milk – 2 tbsp. l.
salt to taste
butter
Preparation:
Separate the yolks from the proteins.
Put the proteins in a cold, clean, and dry bowl, add a pinch of salt. Beat with a mixer until firm peaks.
Beat the yolks a little with a whisk with milk to make them homogeneous.
Heat a frying pan, grease with a piece of butter, put the heat to a minimum and pour the yolks, and spread over the entire surface of the pan.
When the yolk has set a little, spread the whipped egg whites on top with a spatula and distribute evenly over the surface. Cover and fry on low heat for 3-5 minutes.
At first, your omelet will rise a lot, but as soon as you remove the lid – it will fall. But this is perfectly normal because it will still remain tall and lush.
You can check the readiness with a spatula, attaching it to the proteins. If it sticks, you should hold the omelet on the pan for a while longer. If it does not stick – remove it.
Serve the omelet usually, cut in half, and put its pieces on top of each other so that the yolk was on top.
