What ingredients should be taken to make soup from fresh wild mushrooms?
The composition of the ingredients for a hot dish is quite simple. Everything you need can be easily bought in any grocery store.
Ingredients:
vermicelli – about 30 g;
butter – 50 g;
garlic – 1 clove;
onion – 1 piece;
medium-sized carrots – 1 piece;
potatoes – 2 pcs. medium size;
mushrooms – about 10 pcs.
How to cook a delicious rich soup of fresh wild mushrooms:
It will take about 1.5 hours to prepare such a dish. The caloric content of the soup is approximately 144 kcal per 100 g. First of all, you should prepare all the necessary ingredients for cooking a delicacy.
Wild mushrooms can be taken any that you like, such as grasshoppers and boletus edulis. And it is necessary to take a fresh product, not old, with strong and elastic caps. As for vegetables, they should all be of medium size. Butter will be needed for frying. But vermicelli – at will. It is quite possible to do without it.
Preparation:
1. First of all, you should carefully sort wild mushrooms, remove all debris, dust, pieces of dirt, rinsing under running water. Then use a knife to cut the product into pieces and remove wormy places. The legs should be cut into rings, but the caps – into two or four parts, depending on size. Next, pour the mushrooms with cold water and leave to stand. To get rid of worms, you can add a little more salt to the water.
2. Next, take a convenient pot for soup, send mushrooms in it, pour cold water, put on medium heat, and cook for one hour. During the process, do not forget that you need to remove the foam.
3. Potatoes should be peeled and cut into medium-sized cubes. After an hour of cooking mushrooms, add the vegetables to the soup and cook further.
4. Peel and onion, rinse, and dry with paper towels. Do the same with carrots. Peel the garlic and chop finely. Cut carrots into rings and onions into half rings.
5. Take a frying pan, send butter in it, melt it and fry onions, carrots, and garlic until golden.
6. Next, fried vegetables should be sent to the mushrooms, then salt and pepper to taste. Here, if desired, add allspice and bay leaves. Stir and continue to cook for another ten minutes.
7. Before the end of cooking, you need to send vermicelli into the soup and mix everything well.
Then the fire under the dish should be turned off and let stand under the lid. The soup is poured on plates, and on top add fresh dill and parsley, as well as sour cream.
